Aloo Methi saag

To begin with...
Ingredients:

Aloo (peeled and diced small) 5
Fresh green methi leaves (washed plucked and cut small)1bowl
Singdana roasted and crushed (peanuts) 1/2 a cup
Jeera 1tsp.
Jeera powder 1/2 tsp
Red chilli powder 1tsp
Haldi powder 1/4 tsp
Amchoor powder (dried mango powder) 1/2 tsp
Salt to taste
Hing 2 pinch

Oil 3 tbsp


Procedure :
First wash and cut aloo into small pieces and soak in water.
Pluck and wash methi leaves, then to be chopped.
Now heat a pan and add oil,jeera,hing. Strain the aloo pieces and add in the pan let it cook in medium high flame for 5 to 10 mins. With constant stirring and watch so that it does not stick in bottem.
Now add al masala red chilli powder,haldi jeera powder,salt amchoor powder. After adding everything stir it well and let it cook till aloo turns little soft.
Now add crushed singdana, again stir well.
Now add chopped methi leaves stir again. (we are adding methi in last so that we don’t over cook it to loose all its essential nutrients)
Cook for 3-4 mins. more and turn off the stove.
 So there we have  aloo methi ready.
